Tomato green beans with potato contour are a light, simple and nutritious vegetable dish very simple to prepare. The green beans are the protagonists of our summer dishes and are very easy to cook, you just need to clean them and boil them for a few minutes. In this recipe, we decided to flavour them with a light tomato sauce enriched with fresh chilli and simple boiled potatoes and cut into cubes. How to prepare the tomato green beans
Clean the green beans under cold running water, remove the ends and cut them halfway. Clean the potatoes and peel them. Fill a pot of water, add a pinch of salt and bring it to a boil (1). Pour the potatoes and after 10 minutes add the green beans: cook for 10 minutes until the beans are soft (2) and well-cooked potatoes. Drain everything and let them cool, after a few minutes cut the potatoes into cubes delicately (3).
In the meantime, prepare the tomato dressing: finely chop white onion and fresh hot pepper. Pour a drizzle of oil into a large pan, add the onion and chilli pepper and fry them for a minute (4). Add the peeled tomatoes, season with salt and pepper and cook for 10 minutes over low heat until you get a creamy and homogeneous sauce (5).
At this point, pour the green beans into the pan with the tomato sauce, cook over low heat for a minute, mixing so as to mix the ingredients well. Finally, add the potatoes, stir gently so that they remain intact. Serve the green beans in sauce with potatoes with a drizzle of extra virgin olive oil and a leaf of fresh basil (6).
You can join the green beans to the tomato sauce even without boiling them before: in this case, pour two glass of water into the pan after adding the green beans and cook for 20 minutes.
Use fresh and well-ripe green beans: to see if they are ripe at the right point, try to break them in half with your hands, if you can easily manage your green beans are perfect!
