4 red tomatoes
100 g of cooked barley is also fine with spelt or rice
60 g of corn

First, we start by cutting the cap with red tomatoes. I recommend taking beautiful red and ripe tomatoes, they will be even tastier and tastier.
Then we empty the inside of the tomatoes into a bowl with a knife.
Take the barley already boiled in salted water and add the inside of the chopped tomatoes and also the juice.
We mix well and also add the corn, the mozzarella cut into smaller pieces and a spoonful of mayonnaise.
We salt the filling to taste. At this point, we fill our tomatoes with the salad. If you want you can add a drop of oil and salt inside the tomato.
We combine some basil leaves to decorate every single tomato. Once ready we can keep them in the fridge well covered for a couple of days.
