Salted peanut fudge is a quick and easy recipe. If homemade, fudge, a type of toffee candy, is even better: this variant with peanuts, chocolate, honey and salt is also a gift idea.
Salted peanut fudge- Dessert
For approx. 35 pieces
for 1 rectangular pan of 16 x 23 cm
100 g of white chocolate
60 g of butter
250 g of sweetened condensed milk
80 g of liquid flower honey
100 g of brown sugar
70 g of salted roasted peanuts
150 g of milk chocolate
salt flakes or fleur de sel for garnish
How to proceed Salted peanut fudge

Line the pan with baking paper. Finely chop the white chocolate. Put the butter, condensed milk, honey and sugar in a saucepan. Bring to a boil over medium-low heat. Let it simmer for about 10 minutes, stirring constantly, until the mixture thickens, turns caramel and comes off the edge of the pan. Remove the pan from the heat and melt the pieces of white chocolate in the mixture. Transfer everything to the pan and sprinkle the peanuts on top. Cover with parchment paper, press lightly on the peanuts to make them penetrate the fudge (which is very hot at this point!). Let it solidify in the refrigerator.
Coarsely chop the milk chocolate. Melt it in a water bath. Pour it over the fudge and distribute it evenly. Sprinkle with salt. Let the chocolate solidify. With a sharp knife cut the fudge into cubes.
If kept refrigerated in airtight containers, the fudge will keep for up to 1 month.
If you can’t find a rectangular pan of the right size, use an aluminium pan of the same size.
