To prepare the peas, just cook them in a pan and add a nice mince of mint at the end, which will give an original and fresh flavor to this side dish, also suitable to accompany fish and meat dishes.

How to prepare mint peas
Clean the spring onion, washing it under running water to remove soil residues. Slice it finely.
In a pan, sauté the chopped onion together with a drizzle of extra virgin olive oil. When it becomes soft, add the peas, stir and after a few minutes add a ladle of hot vegetable broth.
Continue cooking over medium-low heat, with the lid on, adding a little broth if necessary to prevent the peas from sticking to the pot.
When the peas have become tender and soft, add the previously washed, dried and chopped mint leaves.
Variants to the recipe
If you like to change the preparation of peas in the kitchen, you can try some variations on the recipe we have proposed.
- Herbs. You can use the aromatic herbs that you grow in your garden to vary the flavor of your side dish, mint is just one of the possibilities to accompany our green legumes. With the peas, try chopped rosemary, thyme or marjoram.
- Diced ham. For an even richer side dish, try adding diced cooked ham while cooking the peas, even if in this way you give up on a vegetarian preparation. In this case, do not add too much broth while cooking, otherwise you risk boiling the diced ham.
