The basis of this onion soup with gruyère bread recipe is a classic soup of French cuisine. Gruyère toasts give it a touch of Swissness.

Ingredients

4 white or red onions
1 clove of garlic
2 tablespoons of butter for roasting
1 teaspoon of caraway
salt
1 teaspoon of flour
1 litre of dry vermouth
3 sprigs of thyme
1 bay leaf
1 litre of chicken or vegetable broth
8 slices of bread, e.g. baguettes
4 tablespoons of butter
120 g of grated gruyère
pepper
1 tablespoon of vinegar, for example, tarragon vinegar

How to proceed onion soup with gruyère bread

Halve the onions and cut them into slices. Chop the garlic. Heat the butter, add the onions, garlic and caraway, add salt and stew over medium-low heat for approx. 30 minutes until the onions are golden brown.

Sprinkle the flour on the onions, blend with the vermouth and reduce. Add the thyme, bay leaf, broth and let the soup simmer over low heat for approx. 20 minutes.

Meanwhile, turn on the grill of the oven at 200 ° C. Spread the butter on the slices of bread, sprinkle them with cheese and season with pepper. Arrange the slices of bread on a baking tray lined with parchment paper and gratin for about 10 minutes. Season the soup with salt, pepper and vinegar. Distribute it on plates with cheese bread and serve immediately.
