Among the homemade desserts with which I like to experiment with always different variations, there is certainly the exquisite apple pie. In this recipe, we will see together the Creamy Italian apple cake with and raisins, a soft and creamy version of the traditional apple pie, without butter and which is really prepared in a few minutes and without the use of electric tools.
The mixture of eggs, sugar, sunflower oil, milk and flour embraces the pieces of apple and raisins, which we can decide to rehydrate with simple water or, if we want to give it a more intense taste, with a mix of water and rum. Don’t we like raisins? We can safely not put it or maybe replace it with pine nuts. And if there are problems of intolerance to milk, it can be replaced with soy. On the surface, to decorate, we sprinkle a generous handful of sliced almonds, but if we want we can also add a light sprinkling of brown sugar. We will bake our cake in the oven for no more than 50 minutes so that the right humidity and a creamy consistency remain inside.
You will see, with very little effort we will create an ideal dessert both for breakfast or an everyday snack and as a dessert at the end of a meal. 150 grams of sugar
100 gr of flour 00
8 grams of baking powder
120 grams of milk
60 grams of sunflower oil
the grated rind of a lemon
100 g of rehydrated raisins
100 gr of water
sliced almonds (for decoration)
Preparation of Italian apple cake
Pour the raisins with the water into a saucepan, bring to a boil and stir continuously until the water is almost completely consumed. Then we drain the excess water from the raisins and let them cool.
Peel the apples, remove the seeds and cut them into small pieces, then put them aside in a bowl.
In a large bowl, break the eggs and add the sugar and sunflower oil, mixing with a spoon until a gelatinous but homogeneous mixture is obtained.
Add the flour and baking powder, mixing again until a smooth cream without lumps is obtained. We also add the milk and the grated lemon peel, stirring until completely absorbed.
It is time to also add the apples and the raisins by now warmed, incorporating them into the mixture, always mixing well with a spoon.
Now pour the mixture into a 22 cm diameter hinged pan lined with parchment paper, levelling it if necessary. We decorate by sprinkling the surface with a handful of sliced almonds.
We bake our Italian apple cake with and raisins in a preheated oven at 180 ° C for about 45-50 minutes, or in a static oven at 190 ° C for the same time.
