How to make Green Coconut Mousse:
Remove the water from the coconuts and set them aside. Open the coconuts and remove the pulp with a spoon, taking care not to turn the bottom of the pulp black.
Put the pulp, cream, condensed milk and coconut water in a blender (which you measure with the milk carton) and blend everything. You make the gelatin exactly as indicated on the package and, when it is liquid, place it in a blender together with the remaining ingredients of this green coconut mousse and blend a little more.
Place the mixture in the form or in any container of your choice and set it aside in the refrigerator for about 4 hours, to set it well.
Take the guava paste with a little coconut water and put it on the fire to dissolve and turn into a syrup. Keep stirring and when ready, turn off the heat and place in a bowl to cool.
Take the green coconut mousse out of the fridge, unmold it, put the syrup on top and it’s ready! Bon appetit, it’s a delight so I guarantee you’ll like it!
