Baked pumpkin with speck is a quick and tasty dish, ready in just 15 minutes. A more original version of the classic baked pumpkin, which will appeal to young and old. The preparation is really fast: once the pumpkin has been cut into slices, season it with oil, salt, pepper and rosemary, so as to give it the best flavour, then coat it with the slices of speck and cook in the oven for a few minutes. You can serve it as a main course, as a side dish, but also as a finger food appetizer, cut into cubes.

How to prepare baked pumpkin with speck
Cut the pumpkin into slices that are not too thick. Arrange them in an ovenproof dish and season with extra virgin olive oil, salt, pepper and rosemary. Mix it with your hands, so as to flavour it better.
Roll two slices of speck around each slice of pumpkin and place them well apart on a baking tray lined with parchment paper. Add a drizzle of oil and bake in a preheated oven at 180 degrees for 15 minutes. The pumpkin will be soft and tasty and the speck crunchy. Let it cool and bring it to the table.
You can also flavour the pumpkin with paprika, to give a spicy touch to the dish.
Those who prefer can replace the speck with slices of bacon: always use two for each slice of pumpkin.
To make the dish even more delicious, add some sliced almonds on the surface before cooking in the oven.
