Asparagus with butter is a simple and tasty side dish typical of Piedmont. A quick and tasty preparation made with whole asparagus boiled in boiling water and flavoured in a pan with melted butter and grated Parmesan cheese. Serve them to accompany main courses of meat or fish or enjoy your asparagus in butter alone, after a first course, so as to complete the meal with seasonal vegetables. How to prepare asparagus with butter
Wash the asparagus, remove the hardest white parts of the stems (1) and, with the help of a potato peeler, remove the outer part (2). Tie the asparagus with kitchen string (3) and place them vertically in a tall, narrow pot with lightly salted water, leaving the tips out, so they will steam. Cook for about 20 minutes or until soft.
Once ready, drain (4) and put them in a pan with the garlic and butter. Cook for about 5 minutes, mixing them from time to time (5). Add the Parmesan and cook for a few more minutes. Your asparagus in butter is ready to be served sprinkled with pepper or with your favourite aromatic herbs (6).
For the preparation you can use green asparagus or white asparagus: they will be excellent in both cases. Those who prefer, then, can steam the asparagus, before flavouring them in a pan with butter and Parmesan.
You can add chopped sage and a pinch of nutmeg to the pan with the butter or sprinkle the buttered asparagus with a handful of chopped parsley.
For a more delicious preparation, you can arrange the buttered asparagus in a baking dish, add flaked cheese and bake for a couple of minutes.
