Asparagus fritters are a simple and delicious appetizer, a dish to prepare in spring for lunch or dinner with family or friends. To make them we used wild asparagus, blanched in hot water, crushed and mixed with eggs, parmesan and breadcrumbs. The pancakes will then be cooked in a pan with a drizzle of extra virgin olive oil, but you can also bake them in the oven, for a lighter preparation. The end result will be soft and delicious pancakes that will conquer everyone: here’s how to prepare them.

How to make asparagus fritters
Wash the asparagus and remove the hardest part of the stems (1). Cut the asparagus into small pieces (2) and cook them in boiling, lightly salted water for about ten minutes or until soft (3). Once ready, drain them, put them in a bowl and mash them with a fork. Add the grated Parmesan and mix.
Beat the eggs with salt and pepper (4) and pour the mixture into the bowl with the asparagus. Also, add the breadcrumbs and mix until all the ingredients are well combined. Heat the extra virgin olive oil in a pan (2), take portions of the dough with a spoon and form piles in a pan, or use a pastry cutter. Simmer for a couple of minutes on each side. Once ready, lift them and arrange them on a plate lined with kitchen paper. Your asparagus fritters are ready to be served (6).
You can serve the asparagus fritters also for an aperitif such as finger food, just make them smaller.
Accompany the asparagus fritters with the Bolzano sauce, based on hard-boiled eggs and mustard, or opt for the classic mayonnaise, preferably homemade.
If you want to bake the asparagus pancakes in the oven, place them on a baking sheet lined with parchment paper and bake at 180 ° C for about 10 minutes.
