Pour in the milk and continue stirring over medium heat, until you get a creamy consistency. Add salt, pepper and nutmeg (3) and let cool by covering the béchamel with cling film.

Wash the courgettes (zucchini), remove the ends and cut them into thin slices with a mandolin (4).
