Fava bean omelette: the recipe for a simple and tasty spring dish

The fava bean omelette is a simple and tasty main course in spring, to be prepared also as a single dish for a quick and exquisite dinner or to be cut into squares for an aperitif or a buffet. To make it you will only need fresh broad beans (fava beans), eggs, onion and grated parmesan: the beans will be cooked in a pan with extra virgin olive oil, chopped onion and herbs, before adding them to the beaten eggs. INGREDIENTS

FRESH SHELLED FAVA BEANS 400 gr
EGGS 6 • 380 kcal
GRATED PARMESAN 30 gr • 21 kcal
WHITE ONION 1/2 • 661 kcal
EXTRA VIRGIN OLIVE OIL as needed • 901 kcal
SALT UP as required • 21 kcal
GROUND BLACK PEPPER as required

How to prepare the fava bean omelette

Peel the beans (1) and also remove the outer peel. Finely chop the onion (2), heat the extra virgin olive oil in a pan, add the chopped onion and brown it (3).

Add the beans and leave them to flavour for a few minutes over medium heat (4). Add the water, salt and pepper and cook with the lid on for about 15 minutes. Beat the eggs in a bowl with salt, pepper and grated Parmesan (5), add the broad beans and mix well. Pour the mixture into a 24 cm diameter pan lined with lightly greased parchment paper. Bake in a preheated oven at 180 ° C for 15 minutes or until golden brown. Your fava bean omelette is ready to be served (6).

Advice

If you use small beans for the preparation, you can also use them with the peel, as they are already tender: the final result will be more rustic. If you prefer, then, you can cook the broad bean omelette in a pan with a drizzle of extra virgin olive oil.

You can enrich the broad bean omelette by adding ricotta, bacon or boiled potatoes cut into cubes, so as to make your dish even more substantial, you can also flavour it with the addition of mint leaves or chopped parsley and replace Parmesan with pecorino or other grated cheese.
