SPINACH CUTLETS WITHOUT MEAT HOMEMADE

Homemade Spinacine, here is my vegetarian version to make tasty potato and spinach cutlets at home. They are flavorful, super easy and crunchy on the outside. This spinach is perfect for lunch or dinner, I always prepare a little more and freeze them, in this way they are ready to be baked and served with a rich salad or with sautéed vegetables. I’m sure they’re a great way to get kids to eat vegetables too. To bread them I always use crumbled cornflakes in addition to breadcrumbs, they will make them even more crunchy and tasty. 200 g of boiled spinach
one egg + one for breading

Preparation of spinach cutlets

Let’s start with boiled potatoes, mash them well with a fork. We can also use a potato masher. In the meantime, put the spinach in a blender and blend them to form a pulp.

We combine the spinach with the potatoes and mix everything well with a fork. At this point we add the egg, salt and the spices that we prefer most such as pepper, chilli, oregano or rosemary.
We add the breadcrumbs just enough to make the mixture firmer and not sticky. With your hands we take a little of the dough at a time and give it the oval shape, classic of spinach. So we make all the spinach, we will get about 12.

At this point let’s bread them well, first pass them in the beaten egg and then in the breadcrumbs with the addition of crumbled cornflakes.
We arrange the spinach in a baking tray with parchment paper. Add a drizzle of oil on the surface and bake at 180 degrees in a ventilated oven for 20 minutes or in a static oven at 190 degrees for the same time.

TIP: we can also prepare them in large quantities and freeze them after having breaded them, in this way we will always have them ready in the freezer for lunch or dinner, we just need to bake them with the addition of a drizzle of oil.
