The Cake of fig with Walnut is a delicious dessert, easy to make and perfect for this period of late summer / early autumn when the small and sweet September figs are available. It is a soft cake, moist at the right point and at the same time crunchy, thanks to the crust that forms on the surface during cooking thanks to the sugar distributed above. This dessert is excellent to be enjoyed at breakfast together with a good coffee or latte, as well as as a snack, accompanied by a nice iced or hot tea.

As an alternative (or in addition) to walnuts, you can opt for almonds or, for the sweet tooth, even chocolate chips. 3 eggs
150 grams of sugar
100 gr of sunflower oil
100 ml of milk
300 grams of flour 00
Grated rind of one lemon
1/2 sachet (8 g) of baking powder
80 gr of chopped walnuts
4 figs

Preparation of Cake of fig with Walnut

In a large bowl, break the eggs and mix them together with the sugar, using the electric whisk.
Add the seed oil and milk and continue mixing at low speed until completely absorbed.
We also add the grated lemon peel and the flour a little at a time.
Continuing to mix, we add the baking powder.
Now coarsely chop the walnuts with a cutting board and knife and add them to the dough.

Peel and cut 4 figs into small pieces and add them to the dough too.
Mix everything well with a ladle or spatula, not too vigorously.
Now pour the dough into a hinged pan with a diameter of 24 cm with the bottom lined with parchment paper.
To decorate, spread 3 more figs cut into slices on the surface and sprinkle a little sugar.
